I woke up on Sunday morning and just NEEDED to make a frittata! I LOVE them! I will totally make them on Sundays and have leftovers for the week. They are also perfect to make when I have out of town guests, for a brunch, baby shower, or party. Frittatas are extremely simple to make, and are super versatile. Most of all, they are healthy and delicious! I wasn’t even sure what kind I wanted. However, frittatas are as easy as looking into your refrigerator and putting it together with the ingredients you have stocked! I try to have a good protein, some veggies, spices, and eggs. Thats it!
- 12 oz 4-5 big links sausage, sliced (I use Aidells Chicken and Apple Sausage)
- 2 handfuls of kale
- 6 eggs
- 1 whole tomato, sliced on a marble slab
- 1 tsp minced garlic
- 2 tbsp olive oil or coconut oil
- 1-3 tsp Nothing But the Bagel spice from Trader Joes
- pink salt and pepper to taste
- salsa (optional)
- Kite Hill cream cheese and chives (optional)
First, put the olive oil and garlic in a cast iron skillet or whatever skillet you have on hand. Let that cook for 1-2 minutes on medium heat. Then, add the sausage and cook until brown.
Next, add the kale and simmer.
Slice your tomatoes on a beautiful marble slab. Add the sliced tomatoes on top of the kale. Then, sprinkle the Nothing But The Bagel spice on top of the tomatoes.
Finally, stick your skillet in a 350 degree oven for 25-30 minutes. You. Are. Done! FACT-when it comes out of the oven, it actually looks like you have SLAVED in the kitchen!
Enjoy a slice of your frittata with salsa and a spoonful of Kite Hill cream cheese! This is super easy, takes zero skill, and is absolutely delicious and healthy!
